Most of what's here is built around a few constraints: high protein, low sugar, made from the garden where possible, and built to batch. The tools are modernist — chamber vac, dehydrator, sous vide — but the intent is old. Feed the household well. Waste nothing. Make it repeatable.

The exceptions are the [Saturday menus](Saturday Menus) and the splurges, which exist because a life without [clafoutis](Blueberry & Brandy Clafoutis) isn't worth defending.
